Eat Fresh with...

Meg Knight

Athlete profile: I have been rowing six years and I train twice a day, six days a week whilst studying at university. I love to train because it's challenging, competitive, and helps me to get stronger.

Biggest achievement: I have won lots of medals, but I am most proud of winning gold at the Under 19 World Rowing Indoor Championships in 2021, and bronze at the Under 19 World Championships in Italy in 2022. My ultimate goal is to represent Team GB at the Olympic Games one day!

Fun fact: I never enjoyed sport until I found rowing at the age of 12 and now I absolutely love it! I think that there is a sport for everyone, so just give new sports a go, and who knows what you will discover.

How do you Eat Fresh?

1. What does healthy eating mean to you?

To me, healthy eating means getting enough fuel into my body so that I can do my best. As an endurance athlete, it is important for me to eat a lot of carbohydrates so that I have plenty of energy for my training sessions. I also like to eat foods high in protein after training, to help my body to repair and my muscles to grow.

2. What fresh, healthy foods do you need to fuel your day and why is this important for your sport and daily life?

My favourite after training snack is granola, yogurt and fruit. The granola is a good source of carbohydrates, the yogurt is a good source of protein and calcium, and the fruit is full of vitamins to help keep my body healthy. Baked beans are also a great source of protein - I love to eat them for any meal of the day.

3. What fresh, healthy dish do you enjoy making the most and why?

My favourite dish to make at home is a stir fry packed with veggies. The noodles are packed with carbohydrates, and I love to experiment with flavours and ingredients. Some of my favourite ingredients include egg, chicken, or beef for protein, plus vegetables such as carrots, onions, peppers, beansprouts, peas, mushrooms, and broccoli.

4. What can make eating well and cooking challenging for you?

At university, we have chefs who make our food in the dining halls, so I don't cook very often. We also have one kitchen in our dorm, and I am often busy with university work or training, so this makes cooking challenging for me. There are plenty of tasty, healthy options available in the dining halls though, so I can eat well.

5. What helps make eating well and cooking easier for you?

I love the many options available in the campus dining halls and it makes it really easy to make healthy choices. The salad bars are great and mean that I can add lots of delicious fruits and vegetables to my meals.

6. What does healthy, sustainable food mean to you?

To me, healthy, sustainable food means that everybody involved in getting healthy food to our plates gets paid and treated fairly. Whether it's farmers, truck drivers, shop-keepers or chefs, everyone deserves a fair wage for their hard work.

7. What are your ‘super six’ fruits and vegetables?

Bananas, strawberries, cucumbers, bell peppers, tomatoes and watermelon.
